Whip 2 extra large egg whites in a bowl until stiff white peaks form.
Measure out 1 and 3/4 cups self-rising flour (1 cup, then 1/2 cup, then 1/4 cup) and add to a large bowl.
Add 2 tablespoons plus 1/4 teaspoon of white sugar to the flour and whisk the dry ingredients together until well combined.
Make a well in the center of the dry ingredients.
Add 1/4 cup canola oil (or vegetable oil), 4 tablespoons melted unsalted butter, 2 egg yolks, 1 teaspoon vanilla extract, 1 teaspoon maple extract, and 1 and 1/2 cups buttermilk into the well.
Mix the wet ingredients together until well blended, being careful not to over mix.
Fold in the whipped egg whites into the batter until combined.
Let the waffle batter rest while preheating the waffle maker.
Preheat the waffle maker until steam is visible.
Spray the waffle maker with cooking spray on both sides to prevent sticking.
Use a 1/2 cup measurement to pour batter onto the waffle maker and spread it evenly.
Close the waffle maker and cook until the waffle is golden brown.
Brush the cooked waffle with melted butter before serving.
Serve the waffles with a pat of butter and maple syrup.
