Originating from the Dominican Republic, Sancocho de Res is a beloved dish often prepared for family gatherings and special occasions. This hearty stew reflects the island's agricultural bounty, featuring a variety of root vegetables and tender beef. Each family may have its own unique twist, making it a versatile comfort food that is enjoyed throughout the Caribbean and beyond.

Cauliflower is lower in carbs, while potatoes are usually cheaper.
Wash the beef chuck with water and vinegar.
Blend sorito, garlic, cilantro, bell peppers, and onions with a little vinegar in a blender.
Add 1 teaspoon of oregano, 2 teaspoons of complete seasoning, and 1 teaspoon of adobo to the blended mixture.
Sprinkle the mixed seasonings over the beef.
Sprinkle the packet of chicken bouillon over the beef.
Add olives to the beef mixture.
Add about 1 tablespoon of soy sauce to the beef mixture.
Add about 1 teaspoon of lime juice to the beef mixture and mix everything together.
Heat a pan on high heat and coat the bottom with olive oil.
Add 1 tablespoon of sugar to the heated oil and let it brown slightly.
Carefully add the beef to the pan once the sugar is golden brown.
Mix the beef in the pan until it is well coated and browned.
Lower the heat to medium and cover the pan, cooking for 20 minutes without adding water.
After 20 minutes, check the beef; it should have released its juices.
Add the 1/3 can of tomato sauce to the beef and mix.
Increase the heat slightly and cover the pan again, cooking for about 15 minutes.
Check the beef; if it's still tough, cover it for an additional 10 minutes.
Add a few carrots to the beef mixture and lower the heat again, covering for about 5 minutes.
Once the carrots are soft, increase the heat to high to reduce the liquid until the sauce thickens.
Turn off the heat and cover the pan until ready to serve.
