Instructions
- 1Flake the cooked salmon into a large bowl.
- 2Boil potatoes until tender, then mash them.
- 3Add mashed potatoes to the bowl with salmon.
- 4Chop green onions and add to the mixture.
- 5Stir in bread crumbs, egg, mustard, lemon juice, parsley, salt, and black pepper.
- 6Mix until well combined.
- 7Shape the mixture into patties.
- 8Heat oil in a skillet over medium heat.
- 9Cook the patties for 4-5 minutes on each side until golden brown.
- 10Remove from skillet and drain on paper towels.

Instructions
- 1Preheat the oven to 375°F (190°C).
- 2In a large pot, bring water to a boil and add the salmon fillets. Cook for about 10 minutes or until cooked through. Remove and let cool.
- 3Once cooled, flake the salmon into a large mixing bowl.
- 4Add the finely chopped kale, breadcrumbs, Parmesan cheese, mayonnaise, egg, Dijon mustard, garlic powder, onion powder, salt, and black pepper to the bowl with the salmon. Mix until well combined.
- 5Form the mixture into patties, about 2-3 inches in diameter.
- 6Heat olive oil in a large skillet over medium heat. Add the fishcakes in batches, being careful not to overcrowd the pan.
- 7Cook for about 4-5 minutes on each side or until golden brown and crispy.
- 8Transfer the cooked fishcakes to a baking sheet and place in the preheated oven for an additional 10 minutes to ensure they are cooked through.
- 9Serve warm with a side of tartar sauce or a fresh salad.
