Mix the dry ingredients: add 3 and 1/4 cups of all purpose flour, 1 tablespoon of corn starch, 1 and 1/4 teaspoons of baking soda, and 1/2 teaspoon of salt to a bowl and whisk them together.

In a large mixing bowl, add 1 cup of softened unsalted butter, 1 and 1/2 cups of packed brown sugar, 1 tablespoon of vegetable oil, and 2 teaspoons of vanilla extract. Mix with a wooden spoon.

Cream together the butter and sugar until no lumps of butter remain in the mixture.

Add in 2 large room temperature eggs and mix until well incorporated.

Add in 2 cups of semi sweet chocolate chips and mix until well combined. Save a few extra chocolate chips for topping the cookies after baking.
