Add 1 cup of granulated sugar to the saucepan with the coconut water.
Add the chopped coconut to the saucepan.
Incorporate vanilla flavor (optional) into the mixture.
Turn on the heat to medium-low and stir the mixture with a spatula for about 25 minutes.
Continue to toss and stir the mixture, ensuring it doesn't stick to the sides of the pan.
Watch for the mixture to start caramelizing, stirring constantly to avoid burning.
Monitor the color of the mixture, ensuring it doesn't get too dark to avoid bitterness.
Once the desired color is reached, turn off the heat and allow it to cool.
You can mold the mixture into shapes or simply pour it into a bowl to cool.
