Revani is a traditional Turkish semolina cake, often enjoyed during festive occasions and family gatherings. Its origins can be traced back to the Ottoman Empire, where it was a popular dessert among the sultans. The cake is soaked in a sweet syrup, giving it a moist texture and a delightful flavor. Today, Revani is cherished not only in Turkey but also in various Middle Eastern and Balkan cuisines, each with its unique twist.

Preheat the oven to 180°C (350°F).
Grease a baking dish with butter.
Mix semolina, baking powder, and vanilla extract in a bowl.
In a separate bowl, whisk eggs and sugar until pale and fluffy.
Add yogurt and lemon zest to the egg mixture and stir until combined.
Gradually fold the dry ingredients into the wet mixture until just combined.
Pour the batter into the prepared baking dish and spread evenly.
Bake for 30-35 minutes or until golden and a toothpick comes out clean.
While the cake bakes, prepare the syrup by boiling water and sugar until dissolved.
Remove from heat and add rose water and lemon juice to the syrup.
Once the cake is done, pour the syrup over the hot cake and let it soak for at least 30 minutes.
Garnish with almonds and coconut flakes before serving.
