1 oz dried snow fungus
1/2 cup dried lotus seeds
1/2 cup pearl barley
1/2 cup dried red dates
1/4 cup dried goji berries
1/2 cup dried longan
3/4 cup rock sugar
4 cups water

Rinse and soak dried snow fungus in hot water for 10 minutes.

Rinse and soak dried lotus seeds and pearl barley in hot water for 10 minutes.

Halve and remove the seeds from dried red dates if using the bigger variety.

Rinse dried goji berries and dried longan quickly.

Fill a pot with 3L of water and bring it to a boil.

Pour out the soaking water from the snow fungus and cut it into small parts, discarding any hard middle.

Once the water is boiling, add the lotus seeds and pearl barley and simmer for 2 minutes.

Add the snow fungus and cook for 5 minutes.

Add the dried red dates and longan, stir, and simmer for another 5 minutes.

Add 200g of rock sugar and cook on low heat for 10 minutes with the lid partially on.

Add the goji berries and let them simmer for 5 minutes, stirring through.
