Add 1/4 cup cashew butter to a mixing bowl.
Add 2 tbsp tahini to the mixing bowl.
Add 1/3 cup maple syrup to the mixing bowl.
Add 1/3 cup avocado oil to the mixing bowl.
Add 1 tbsp apple cider vinegar to the mixing bowl.
Add 1 tsp vanilla to the mixing bowl.
Blend the wet ingredients until smooth using a hand mixer.
Add 2 eggs to the mixture and blend until incorporated.
Add 2/3 cup almond flour, 1/3 cup cocoa powder, 1/3 cup cane sugar, 1/2 tsp baking soda, 1/4 tsp baking powder, and 1/2 tsp salt to the mixing bowl and blend until smooth.
Fold in 2 tbsp mini chocolate chips.
Line an 8x8 pan with parchment paper and spray the exposed sides with cooking spray.
Pour the brownie batter into the pan and spread it evenly.
Add 2 cups of corn checks to a sandwich bag and crush them by hand.
Add the crushed corn checks to a mixing bowl.
Add 2 tbsp tahini to the crushed corn checks.
Add 4 tbsp maple syrup to the corn checks and tahini mixture and stir together.
Sprinkle the corn checks mixture over the brownie batter and gently press it down.
Chop 1/4 cup peeled pistachios and sprinkle them on top of the brownie mixture.
If the pistachios are unsalted, sprinkle a little coarse sea salt over the top.
Sprinkle the remaining mini chocolate chips on top of the brownies.
Bake in a 350°F oven for 25 to 28 minutes.
Melt 2 tbsp white chocolate melting wafers and 1/2 tsp coconut oil in the microwave for 25 seconds, stir, then microwave for another 20 seconds until smooth.
Add 1/4 tsp spirulina powder and a dash of turmeric to the melted white chocolate and mix until combined.
Drizzle the green chocolate over the brownies after they have cooled completely.
