  • 1/4 cup olive oil
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp saffron threads (optional)
  • 2 cups chicken broth
  • 1 lemon, sliced (for garnish)

Instructions

  1. 1Preheat the oven to 375°F (190°C).
  2. 2In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent.
  3. 3Add the rice to the pot and stir for a few minutes until slightly toasted.
  4. 4Pour in the chicken broth and bring to a boil. Reduce heat, cover, and simmer for about 15 minutes until the rice is cooked and liquid is absorbed.
  5. 5In a large bowl, combine the cooked rice, dried apricots, walnuts, raisins, parsley, dill, salt, pepper, cumin, coriander, and saffron (if using). Mix well to combine.
  6. 6Rinse the whole chicken under cold water and pat dry with paper towels. Season the inside and outside of the chicken with salt and pepper.
  7. 7Stuff the chicken cavity with the rice mixture, packing it tightly. Use kitchen twine to tie the legs together and secure the opening.
  8. 8Place the stuffed chicken in a roasting pan and cover it with aluminum foil.
  9. 9Roast in the preheated oven for about 1 hour. Remove the foil and continue roasting for an additional 30-45 minutes, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F/75°C).
  10. 10Let the chicken rest for 10-15 minutes before carving. Serve garnished with lemon slices.
