Wash pig feet thoroughly with lime juice.

Add water to a pressure cooker and season with salt.

Cut onion into quarters and add to the pot.

Add lots of garlic to the pot.

Cover and cook on medium heat for over 3 hours until tender.

Prepare the brine by chopping parsley and removing seeds from scotch bonnet pepper.

Add chopped cucumbers and carrot sticks to the brine.

Mix in lime juice from 2 limes and salt to taste.

Let the brine sit while the pig feet cook.

Once pig feet are tender, drain and rinse with hot water.

Combine pig feet with the brine and let sit for a while.
