1

Cut off the edges of 4 slices of bread and cube them into smaller pieces.

2

Boil 2 cups of milk in a heavy bottom pot and add 1/4 cup of granulated white sugar, stirring occasionally.

3

Once the milk is boiling, remove it from heat and stir in 2 teaspoons of unsalted butter until melted.

4

Add the cubed bread to the hot milk and press down to soak the bread.

5

Grind 2 green cardamoms and add the powder to the mixture along with freshly grated nutmeg and a pinch of ground cinnamon.

6

Let the mixture cool while beating 2 eggs and 2 egg yolks with 1/4 teaspoon of salt and 2 teaspoons of vanilla extract.

7

Add the egg mixture to the soaked bread and mix gently with a spatula.

8

Chop 15 g each of cranberries, pistachios, raisins, and cashew nuts and mix them together.

9

Prepare caramel by combining 4 tablespoons of sugar, 2 tablespoons of water, and a dash of lemon juice in a heavy bottom pan and heat until it turns a medium amber color.

10

Pour the caramel into a 6-inch cake pan, swirling to cover the base.

11

Layer the pudding mixture and half of the dried fruits in the caramel-coated pan, then repeat with another layer of pudding and dried fruits.

Cover the pudding with aluminum foil and steam it in a pot with water halfway up the pudding mold for 40-50 minutes.
