Prepare the dough by mixing 2 cups of all-purpose flour, 1 tsp salt, 1 tbsp powdered sugar, and 1 tbsp ghee (or oil).
Gradually add 1 cup of water and knead the mixture until it becomes smooth and stretchable, about 5 minutes.
Let the dough rest for some time, applying a little oil on top.
In a pan, add 3-4 tbsp of oil and shallow fry the boiled soya chunks and paneer chunks along with grated ginger on low-medium flame.
Add all the sliced vegetables and 2 green chilies to the pan, season with a little salt, 1 tbsp garam masala, and 1/2 tbsp black pepper powder.
Add sweet corn kernels and green peas, and cook on low-medium flame until the vegetables are half cooked.
Mix in 2 tbsp of tomato sauce and 1 tbsp of chili sauce, then add the cooked and dry noodles, tossing everything together on medium-high flame for a few seconds.
Add 1/2 tsp vinegar to the mixture and ensure everything is well combined; the stuffing is now ready.
Knead the rested dough for 1-2 minutes and roll it out evenly like a roti or chapati, applying oil on the rolling pin.
Heat a pan and add a little oil, then roast the rolled dough on low flame until light brown spots appear, applying oil on both sides.
Cook until a beautiful golden crust forms, about a minute on low flame.
Apply tomato sauce or chili sauce on the hot paratha, then place the chowmein stuffing on top.
Optionally, add any raw salad of veggies on top of the stuffing.
Carefully fold and wrap the roll, sealing the bottom nicely.
Repeat the process with the remaining dough and stuffing, and serve the delicious 'Chowmein Roll' hot with any sauce.
