Set aside 25% of the dark chocolate.
Place 75% of the dark chocolate in a microwavable container.

Microwave the 75% dark chocolate for about 1 minute and 5 seconds at 900 W power.
Add the remaining 25% of dark chocolate to the melted chocolate to temper it between 29 and 30°C.
Layer the Belgian chocolate mousse and chocolate panettone inside the hollowed panettone.
Pour the tempered dark chocolate over the layers and place in the fridge for about 10 minutes to harden.
