Start with a large heavy-bottom pot and add some oil.
Once the oil is heated, add brown sugar and roast it until it becomes bubbly and amber colored.
Add the chopped chicken that has been washed and seasoned with garlic powder, onion flakes, black pepper, salt, and green seasoning.
Let the chicken sit for 1-2 minutes to sear with the sugar before stirring.
Stir the chicken and allow it to release its natural juices and brown in the pot for about 5 minutes.
Add ketchup and tomato paste to the chicken and mix well.
Optionally, add cash rip for extra color and mix thoroughly.
Add chopped onions, chopped hot pepper, freshly chopped cilantro, and crushed garlic; stir until combined and the onions cook down.
Once the mixture starts to stick to the bottom, add water to cover the chicken and scrape down the sides.
Cover and let it boil until the chicken is cooked, which should take about 15 minutes.
Add finely chopped carrots and red beans (optional) to the pot.
Cover and let it simmer until the carrots and chicken are cooked.
Check the gravy; if it's too thin, leave the pot open to boil down to your desired thickness.
Taste and adjust seasonings as necessary before serving.
