Cheesy Scalloped Potatoes

2 teaspoons minced garlic
1 cup chicken broth
2 cups milk
1 teaspoon salt
1/2 teaspoon pepper
2 cups sharp cheddar cheese, shredded
3 lbs potatoes, thinly sliced (red potatoes or Yukon Gold)

Melt butter in a small saucepan.

Add 1/4 cup of flour and 2 teaspoons of minced garlic to the melted butter and mix until well combined.

Cook the mixture to make a roux.

Stir in 1 cup of chicken broth and mix until well combined.

Gradually add 2 cups of milk, stirring until combined.

Add 1 teaspoon of salt and 1/2 teaspoon of pepper, mixing until everything is combined.

Add 2 cups of shredded sharp cheddar cheese and allow it to melt.

In a 9x13 pan, layer 3 lbs of thinly sliced potatoes (red potatoes or Yukon Gold).

Pour the cheesy mixture over the layered potatoes.
