Cheesy Scalloped Potatoes

110 g unsalted butter
1 Onion
2 cloves garlic
2 Tbsp. Italian herbs
1 Tbsp. ground black pepper
2 Tbsp. all-purpose flour
2 ½ cups milk
Salt to taste
1 Cup Mozzarella cheese
2 cups milk cheddar cheese
1 cup cream cheese
1 handful parsley

Start by slicing the potatoes using a Mandolin slicer to make them very thin.

Soak the sliced potatoes in hot water for about 10 minutes, then drain and cover.

In a skillet, melt the unsalted butter, then add the onion and garlic. Stir for about 2-3 minutes.

Whisk in the milk slowly and season with salt, ground black pepper, and Italian herbs.

Cook the sauce on low heat until it reaches a smooth boil, stirring occasionally with a whisk or spoon.

Reduce the heat and add the Mozzarella cheese, continuing to stir the sauce until smooth.

Grease a baking dish and set it aside.

Place half of the potatoes in the baking dish, pour sauce over the potatoes, and add cheese.

Repeat this process for the second layer, adding cheese, ground black pepper, and Italian herbs.

Cover with foil and bake for 40-50 minutes, then remove the foil and bake for an additional 5 minutes.

Remove from the heat and sprinkle some parsley before serving.
