Cheesy Scalloped Potatoes

2½ pounds about 5 medium russet or Yukon Gold potatoes
1 cup low-sodium chicken broth
1 cup heavy cream
2 tablespoons unsalted butter
1 tablespoon oil
1 medium sweet yellow onion minced
2 cloves garlic minced
1 tablespoon chopped fresh thyme leaves
1¼ teaspoons table salt
¼ teaspoon freshly ground black pepper
2 bay leaves
1 cup 4 ounces grated Cheddar or Gruyere cheese
Garnish: fresh thyme leaves

Preheat the oven to 375°F (190°C).

In a saucepan, melt the butter over medium heat. Stir in the flour, garlic powder, onion powder, salt, pepper, and paprika to create a roux.

Gradually whisk in the heavy cream and milk, cooking until the mixture thickens, about 5 minutes.

In a greased baking dish, layer half of the sliced potatoes, followed by half of the cheese.

Pour half of the cream mixture over the potatoes and cheese.

Repeat the layers with the remaining potatoes, cheese, and cream mixture.

Cover the baking dish with aluminum foil and bake for 45 minutes.

Remove the foil and bake for an additional 15-20 minutes, or until the top is golden and bubbly.

Let it cool for a few minutes before serving.
