Cheesy Scalloped Potatoes

1 kilogram thinly sliced potatoes
1/3 cup flour
40 grams butter
shredded tasty cheddar cheese
1 diced onion
freshly diced chives
1 liter milk
salt

Melt 40 grams of butter in a saucepan.

Add 1/3 cup of flour to the melted butter and mix well.

Pour in 1 liter of milk and stir until it thickens.

Add a pinch of nutmeg, a decent crack of pepper, and about half a teaspoon of salt to taste.

(Optional) Stir in some shredded cheddar cheese until melted and well combined.

In a casserole dish, spread a thin layer of the sauce to cover the bottom.

Layer in some of the sliced potatoes, followed by the diced onion.

Spoon on another layer of the sauce over the potatoes and onion.

Add another layer of sliced potatoes on top.

Use any leftover potatoes to cover the top, even if it's not a full layer.
