Cheesy Scalloped Potatoes

2 pounds Yukon gold potatoes
1 pint half and half
2 tablespoons unsalted butter
3 cloves garlic (minced)
2 cups shredded cheddar cheese
1 cup Parmesan (fresh grated)
Salt and pepper

Butter bottom of 9x13 casserole dish and preheat oven to 325 degrees.

Slice potatoes 1/8 to 1/4" thick. Mince garlic, and shred cheeses.

Place a layer of potatoes in the dish. Over this, drizzle a little half and half.

Cut butter into tiny cubes. Mix butter with garlic so neither sticks, then sprinkle a third over potatoes.

Add 1/2 cup sharp cheddar cheese, then salt and pepper.

Continue layering until potatoes are gone – generally about four layers.

On the top layer, sprinkle grated Parmesan.

Cover dish with tin foil, then bake at 325 for 45 minutes. Remove foil and increase heat to 375 degrees for an additional 15 minutes.

Let cool 5-10 minutes, then serve.
