Cheesy Scalloped Potatoes

3 cups shredded cheddar cheese
2 cups whole milk
4 tablespoons all-purpose flour
4 tablespoons unsalted butter
2 teaspoons garlic puree or 2 garlic cloves chopped or 2 teaspoons minced garlic

Peel and slice the potatoes using a mandolin.

Soak sliced potatoes in water to prevent browning.

Preheat a baking pan and arrange the sliced potatoes in it.

In a saucepan, turn the heat to low and add 4 tablespoons of unsalted butter until melted.

Add 2 teaspoons of garlic and mix with the butter for about a minute.

Add 4 tablespoons of all-purpose flour to the butter and garlic mixture, stirring continuously for about 2 minutes to cook out the flour taste.

Gradually add 2 cups of whole milk, one cup at a time, mixing until smooth after each addition.

Season the sauce with salt and pepper to taste.

Add about 1.5 cups of shredded cheddar cheese to the sauce, stirring until melted and smooth.
