Sweat diced onion in olive oil with a pinch of salt until translucent, about 5-6 minutes.

Remove half of the onion and reserve for stuffing; leave the other half in the pan.

Add balsamic vinegar, beef stock, marinara sauce, and a pinch of red pepper flakes to the pan; stir and pour into the bottom of a deep casserole dish.

Cut green bell peppers in half, scoop out seeds and membranes, and stuff them firmly with the meat and rice mixture.

Place stuffed peppers in the baking dish on top of the sauce, sprinkle with a little more parmesan cheese, and cover with foil.

Bake in a 375°F (190°C) oven for 45 minutes, then remove foil and bake for an additional 15-25 minutes until peppers are tender and tops are slightly colored.
