Start by preparing the dough for the pierogi.

In a mixing bowl, combine 3 cups of all-purpose flour and 1 teaspoon of salt.

Add 1 whole egg to the flour mixture.

Gradually add 1 and 3/4 cups of warm water using a KitchenAid mixer with a hook attachment.

Mix until the dough comes together; it may seem a little loose but will firm up as it rests.

Cover the dough and set it aside to rest while preparing the filling.

For the filling, use a mixture of cooked meats; today, I'm using leftover chicken nuggets and beef nuggets.

Grind the leftover chicken and beef using a KitchenAid sausage maker attachment with the smallest hole.

Add pieces of duck, boiled carrots, parsley root, celery root, and 3 cloves of garlic to the grinder for flavor.

Grind everything together until well combined.

To clean out the grinder, push a piece of bread through to catch any remaining meat bits.
