Wash 4 karelas thoroughly with water.
Cut off both ends of each karela with a knife.
Slightly scrape the skin of the karela to make it look nice and easier to fry.
Cut a slit in the middle of each karela to remove the seeds.
Carefully scoop out the seeds using hands or a spoon.
Do not discard the seeds; keep them for later use.
Place a pan on the stove and add some water to it.
Add the karelas to the boiling water with a little salt.
Cover and boil on medium heat for 5-7 minutes until slightly tender.
Drain the karelas and let them cool.
Prepare the stuffing by heating a pan and adding 2 tablespoons of mustard oil.
Add 1 large chopped onion to the hot oil and sauté until translucent.
Add 8 cloves of minced garlic and sauté until fragrant.
Add cashew nuts and sauté for 1-2 minutes on low heat.
Add the karela seeds that were set aside and sauté for 2-3 minutes on low heat.
Add 2 tablespoons of white sesame seeds and sauté for another 1-2 minutes.
Add chopped green chili to taste and mix well.
Add turmeric powder, cumin powder, coriander powder, Kashmiri red chili powder, and salt to taste.
Sauté the spices for 1 minute without adding water.
Finally, add 1 tablespoon of mustard and sauté for another 1-2 minutes until well mixed.
Turn off the heat and transfer the stuffing to a bowl to cool.
Once cooled, blend the stuffing into a fine paste without adding water.
Stuff the cooled karelas with the prepared stuffing using hands or a spoon.
Heat a pan and add white oil, ensuring it is well heated.
Carefully place the stuffed karelas in the hot oil.
Fry the karelas on low to medium heat, turning occasionally, until golden brown.
Once golden brown, drain the excess oil and place the karelas on a plate for serving.
