8 gms Tamarind

50 gms Yam (Sooran)
50 gms Carrot (Gajar)
75 gms Pumpkin (Kadoo)
50 gms Green Beans (haree fali)
Water
50 gms Drumsticks
50 gms Shallots
1 or 2 Green Chillies
2 tbsp Coconut Oil
5 to 6 (8 gms) Garlic cloves
50 gms Lady Fingers
1 small (50 gms) Tomato
½ tsp Jaggery Powder
1 tsp Mustard Seeds (rai)
½ tsp Cumin Seeds (jeera)
2 to 3 Dry Red Chillies
2 sprigs Curry Leaves
1 tsp Asafoetida (hing)
1 tsp Kashmiri Red Chilli Powder
2 tbsp Sambar Powder
Garnish with some chopped coriander leaves

Soak the tamarind in lukewarm water for 10 minutes, then squeeze and strain the pulp.

Chop the yam, carrot, pumpkin, green beans, drumsticks, shallots, and lady fingers into appropriate sizes.

Heat coconut oil in a pan and add mustard seeds, cumin seeds, and dry red chillies; let them splutter.

Add curry leaves, shallots, garlic, and green chillies; sauté until fragrant.

Add the chopped hard vegetables (yam, carrot, pumpkin, green beans) and cook until slightly tender.

Mix in turmeric powder, sambar powder, and salt; stir well.

Pour in the tamarind water and bring to a boil.

Add the cooked toor dal and adjust the consistency with water as needed; simmer for a few minutes.
