Take a bowl and dump in 2/3 cup milk.

Add 1 egg slightly beaten.

Add 1 teaspoon vanilla.

Add 3 tablespoons of melted butter (slightly cooled to avoid scrambling the eggs) while stirring.

Pour the wet ingredients into the dry ingredients and mix until combined, being careful not to over mix.

If the batter is too thick, add more milk (about 3/4 cup total).

Fold in 3/4 cups of diced strawberries.

Let the batter set and rest while heating the griddle.

Once the griddle is hot, pour about 1/4 cup of batter for small pancakes.

Watch for bubbles to form on the surface before flipping the pancakes.
