Golden Syrup Dumplings

50 grams butter
112 grams dark brown sugar
112 grams golden syrup
240 grams flour
12 grams baking powder
4 grams salt
200 ml whole milk
25 grams golden syrup

Use a shallow pan with a lid for steaming the dumplings.

Add 225 ml of water, 50 grams of butter, 112 grams of dark brown sugar, and 112 grams of golden syrup to the pan.

Set the pan to medium-high heat and let the mixture come to a simmer.

Stir the mixture to ensure all the sugar has dissolved.

In a bowl, combine 240 grams of flour, 12 grams of baking powder, and 4 grams of salt.

Add 50 grams of butter to the flour mixture and work it together with your fingers until it resembles wet sand.

Add 200 ml of whole milk and 25 grams of golden syrup to the flour mixture and mix gently with a fork until combined, being careful not to overmix.

Bring the syrup mixture back to a boil, then gently add scoops of the dumpling mixture using a cookie scoop or dessert spoon, making about 2 tbsp. portions per dumpling.

Turn the heat down to medium to return to a simmer and gently flip the dumplings to coat them in syrup.

Cover the pan with the lid and steam the dumplings on medium-low heat for 10 minutes.

Check the dumplings at the 5-minute mark and flip them again if necessary to prevent sticking.

If the dumplings are not firm after 10 minutes, add another 5 minutes to the steaming time.

Serve the dumplings drizzled with the sauce.
