2 cups beef broth
2 medium potatoes, peeled and cut into 1-inch pieces
2 medium carrots, peeled and cut into 1-inch pieces
1 red bell pepper, seeded and cut into 1-inch pieces
1 cup frozen peas
2 tbls. fresh parsley, chopped
