Marinate venison with salt, black pepper, and lime juice for at least 1 hour.
Heat vegetable oil in a large pot over medium heat until shimmering.
Add chopped onions and sauté until golden brown, about 5-7 minutes.
Stir in minced garlic and ginger; cook until fragrant, about 1-2 minutes.
Add chopped tomatoes and cook until they break down, about 5 minutes.
Mix in curry powder, turmeric, cumin, coriander, and red chili powder; cook for 2 minutes to bloom the spices.
Add the marinated venison to the pot; stir well to coat with the spice mixture.
Brown the venison on all sides, about 5-7 minutes.
Pour in coconut milk and bring to a simmer.
Reduce heat to low, cover, and cook for 1.5 to 2 hours, stirring occasionally.
Check for tenderness; the venison should be fork-tender.
Adjust seasoning with salt and additional chili powder if needed.
Garnish with fresh cilantro before serving.
