Ropa Vieja

Cultural Context

Ropa Vieja, meaning 'old clothes' in Spanish, hails from Cuba and is a staple of its culinary heritage. This dish reflects the island's Spanish and African influences, showcasing the use of slow-cooked, shredded beef in a rich tomato sauce. Traditionally served with rice and black beans, it has gained popularity beyond Cuba, inspiring variations across Latin America and the Caribbean.

CUCUmain
6 servings
Servings4
1 onion
green peppers
skirt steak (or flank steak or chuck roast)
adobo seasoning
avocado oil
Sasson seasoning
2 bay leaves
8 oz tomato sauce
fresh garlic
1/2 cup red wine
water
1

Gather all ingredients: onion, green peppers, skirt steak, adobo seasoning, oil, Sasson, bay leaves, tomato sauce, garlic, wine.

2

Season the skirt steak the night before with adobo, oil, onion powder, garlic powder, oregano, salt, and pepper. Let marinate for a few hours or overnight.

3

Chop the onion and green peppers, leaving the onion whole and cutting the peppers into strips.

4

Take the marinated steak out of the fridge and let it come to room temperature before cooking.

5

Place the marinated skirt steak into the slow cooker, scraping in any leftover seasoning.

6

Add 8 oz of tomato sauce to the slow cooker.

7

Sprinkle in Sasson seasoning (about 1 tablespoon) and a pinch of cumin.

8

Peel the garlic and leave it whole, then add it to the slow cooker.

9

Pour in 1/2 cup of red wine into the slow cooker.

10

Layer the chopped green and red peppers and sliced onion on top of the steak.

11

Add 2-3 bay leaves to the slow cooker.

12

Pour in enough water to cover the ingredients in the slow cooker.

13

Set the slow cooker to high and cook for 5 hours.

14

After 5 hours, check the meat; it should be tender and falling apart. Slice the meat for serving.
