Ropa Vieja

Cultural Context

Ropa Vieja, meaning 'old clothes' in Spanish, hails from Cuba and is a staple of its culinary heritage. This dish reflects the island's Spanish and African influences, showcasing the use of slow-cooked, shredded beef in a rich tomato sauce. Traditionally served with rice and black beans, it has gained popularity beyond Cuba, inspiring variations across Latin America and the Caribbean.

CUCUmain
6 servings
Servings4
1 piece of beef brisket (falda de res)
1/2 onion
4 cloves of garlic
2 bay leaves
black pepper
1 teaspoon salt
olive oil
1/2 bell pepper
1/2 onion
cumin
oregano
3-4 cloves of garlic
1/2 cup tomato sauce
1-1.5 cups beef broth
1

Cut the beef brisket against the grain and then cut it in half.

2

Place all pieces of meat into the pressure cooker.

3

Add enough water to cover the meat completely.

4

Add 1/2 onion, 4 cloves of garlic, 2 bay leaves, black pepper, and 1 teaspoon of salt.

5

Seal the pressure cooker and cook for about 40 minutes.

6

After 40 minutes, release the pressure and open the cooker to check the meat's tenderness.

7

Transfer the meat to a tray and let it cool for about 10 minutes before shredding.

8

In a pan, add a little olive oil to prepare the sofrito.

9

Add 1/2 bell pepper and 1/2 onion to the pan, adjusting the quantity to taste.

10

Add a little cumin and oregano, along with 3-4 cloves of garlic, and mix.

11

Cook the sofrito on low heat, ensuring it doesn't cook too quickly.

12

Add 1/2 cup of tomato sauce to the sofrito, adjusting the amount to taste.

13

Continue cooking the sofrito on low heat for a few more minutes.

14

Shred the cooled meat using two forks or your hands.

15

Add the shredded meat to the sofrito and mix well.

16

Pour in 1-1.5 cups of beef broth and mix everything together.

17

Cook on medium-low heat for about 5-10 minutes until everything is well integrated.

18

When the meat has a creamy texture that is not too wet or too dry, turn off the heat and let it rest for 5 minutes before serving.
