1.5 lbs beef flank
1 tablespoon tomato paste
1 bay leaf
4 cloves garlic
1 green bell pepper
1 red bell pepper
1 can tomato sauce
1 whole onion
0.5 cup dry white wine
1 packet cilantro with achiote
1 teaspoon salt

Start by washing the beef flank and placing it in a pressure cooker with enough water to cover it.

Add 1 teaspoon of salt and 1 bay leaf to the pressure cooker.

Cook the beef for about 15 minutes under pressure.

After 15 minutes, release the pressure and remove the beef from the cooker.

Shred the beef into smaller pieces by hand or with a fork.

In a separate pan, heat 3 tablespoons of olive oil over high heat.

Add the whole onion to the pan and sauté until translucent.

Add the shredded beef back into the pan along with the garlic and mix well.

Add 1 tablespoon of tomato paste and 1 can of tomato sauce to the beef mixture.

Stir in the packet of cilantro with achiote and mix everything together.

Lower the heat and add 0.5 cup of dry white wine to the mixture.

Cover the pan and let it simmer for about 6-7 minutes.

After 6-7 minutes, add the chopped green and red bell peppers to the mixture.

Cover again and let it cook for an additional 45 minutes.
