Blend the soaked dal with 2-3 cloves of garlic, 2 green chilies, and 2 inches of ginger, adding about 1/4 cup of water to make a fine paste.

Transfer the batter to a large bowl and mix in finely chopped onion, grated carrot, and bell pepper.

Add 1/2 tsp turmeric powder, 1/2 tsp red chili powder, 1/3 tsp coriander powder, 1/3 tsp cumin powder, salt to taste, and a pinch of baking soda or eno (optional).
