Ragi Vegetable Soup

1 tsp cumin powder
1 tsp coriander powder
1 liter water
1 large tomato
juice of half lemon
freshly chopped coriander leaves

Dissolve 2 tbsp of ragi flour in 1 and 1/2 cups of water and mix well.

In a wide and deep saucepan, heat 2 tsp of ghee.

Add 1 large finely chopped onion and sauté until translucent.

Add 10 cloves of finely chopped garlic and sauté for about a minute.

Add 1 cup of chopped fresh beans, 1 cup of chopped carrots, 1 cup of sweet corn kernels, and 1 cup of fresh green peas. Sauté the vegetables for 2 minutes.

Season with 1 tsp of salt, 1 tsp of pepper, 1 tsp of cumin powder, and 1 tsp of coriander powder. Mix well.

Cook the vegetables for about 10 minutes on medium flame.

Pour in 1 liter of water and close the pan. Cook for about 10 minutes on medium flame.

After 10 minutes, add the dissolved ragi mixture and 1 large finely chopped tomato.

Cook for an additional 15 minutes until the soup thickens.

Check for seasoning and adjust salt and pepper if needed.

Add the juice of half a lemon and some freshly chopped coriander leaves. Mix gently.
