Detach garlic from the branch and peel it.

For confit garlic, place garlic with skin, thyme, bay leaf, 50 ml of water, and 150 ml of olive oil in a pan.

Boil garlic in cold water for 1 minute, then rinse under cold water.

In a pan, bring 500 ml of milk to a boil with the garlic, then reduce heat and simmer for 30-40 minutes until reduced to 250 ml.

Blend the garlic and milk mixture until smooth.
