Gluten Free Portuguese Sweet Bread

4 whole eggs, room temperature
1 ½ cups granulated sugar
1 cup of milk, warm
½ cup butter, room temperature
½ cup warm water
1 tbsp instant dry yeast
1 tsp salt
1 tbsp lemon extract
2 tbsp aguardente with lemon

In a small bowl, add warm water, 1 tbsp sugar, 1 tbsp flour and yeast. Mix well and let rest for 5 minutes.

In the stand mixer, add eggs, sugar, and butter. Beat with whisk attachment until creamy.

Add yeast mixture, aguardente, and lemon extract. Mix for one minute.

Change the attachment to the paddle. Add flour and beat for 3 minutes until the mixture is soft and has a cake-like consistency.

Oil the pans and divide the mixture between two pans.

Allow it to rest for 30-40 minutes.

Preheat the oven to 350°F (175°C) and bake the sweet bread for about 40 minutes or until a toothpick comes out clean.

Melt some butter and brush the top.

Remove from the pan and allow to cool completely.
