1

Boil salted water in a pot for the pasta.

2

Add short cut pasta to the boiling salted water.

3

In a separate pan, heat extra virgin olive oil (EVOO) over low heat and then bring it to medium heat, adding butter to melt.

4

Add anchovies to the pan and turn the heat down low, allowing them to melt into the oil.

5

Slice four to five cloves of garlic and add them to the pan.

6

Add Calabrian chili paste or chili flakes to the pan.

7

Add capers to the mixture in the pan.

8

Add canned tuna to the pan and heat it through.

9

Pour in about half a cup of dry vermouth into the pan.

10

Drain the pasta when it is one minute underdone, reserving some starchy cooking water.

11

Add the underdone pasta to the pan with the tuna and brown butter sauce, along with the reserved starchy cooking water.

12

Squeeze lemon juice over the pasta, cut side up.

13

Add fresh herbs (dill, parsley, celery tops) to the pasta and mix well.
