Banana Protein Muffins

1 teaspoon baking powder
2 teaspoons cinnamon
1/2 teaspoon salt
1 scoop (1/4 cup) Designer Whey French vanilla protein powder
1 cup natural sugar (for streusel topping)
1/4 cup oat bran (for streusel topping)
1 1/2 cups chopped pecans
1/4 cup melted coconut oil (for streusel topping)

Preheat your oven to 350°F.

Crack 3 eggs into a mixing bowl.

Add 2 ripe bananas to the bowl and mix them together for about 30 seconds until well combined.

Melt 1/2 cup solid organic coconut oil in the microwave for about 30 seconds until liquid.

Add the melted coconut oil to the mixing bowl.

In a separate bowl, combine 1 1/2 cups oat bran, 2 teaspoons baking soda, 1 teaspoon baking powder, 2 teaspoons cinnamon, and 1/2 teaspoon salt.

Add 1 scoop (1/4 cup) Designer Whey French vanilla protein powder to the mixture and mix until just combined, being careful not to overmix.

Scoop the muffin batter into muffin tins, ensuring they are all the same size for even baking.

For the streusel topping, combine 1 scoop (1/4 cup) Designer Whey French vanilla protein powder, 1/4 cup oat bran, 1 cup natural sugar, 1 1/2 cups chopped pecans, and 1/4 cup melted coconut oil in a bowl and mix well.

Add a big tablespoon or two of the streusel topping to each muffin, piling it on top.
