Banana Protein Muffins

4 oz unsalted butter
13 oz protein powder
4.5 oz raw granulated sugar
1 tbsp baking powder
0.5 tsp salt
3 large eggs
15 oz ripe bananas
3 oz walnuts
0.75 tsp cinnamon
0.75 tsp ground nutmeg
almond milk (as needed)

Preheat oven to 350°F.

Line a 12-hole muffin pan with 18 muffin liners.

Cut 4 oz of unsalted butter into pieces and add to mixing bowl.

Replace 13 oz of whole wheat flour with protein powder.

Add 4.5 oz of raw granulated sugar or a sugar substitute like stevia or monk fruit.

Add 1 tbsp of baking powder and 0.5 tsp of salt to the mixture.

Mix all dry ingredients together.

Add 3 large eggs to the mixture.

Replace whole milk with almond milk as needed.

Add 15 oz of ripe bananas, measuring them as you go.

Add 3 oz of walnuts to the mixture.

Add 0.75 tsp of cinnamon and 0.75 tsp of ground nutmeg.

Mix the ingredients until combined but leave chunks of bananas.
