Banana Protein Muffins

2 ripe bananas, mashed
1 cup rolled oats
1/2 cup protein powder
1/4 cup honey or maple syrup
1/2 cup almond milk
1/4 cup unsweetened applesauce
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
1/2 cup chopped nuts or chocolate chips (optional)

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.

In a large bowl, combine the mashed bananas, honey (or maple syrup), almond milk, and applesauce. Mix well until smooth.

In another bowl, mix the rolled oats, protein powder, baking powder, baking soda, cinnamon, and salt.

Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.

If desired, fold in the chopped nuts or chocolate chips.

Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
