Espresso Banana Protein Muffins

1 cup mashed ripe bananas (about 2 large bananas)
1/2 cup unsweetened applesauce
1/2 cup Greek yogurt
1/4 cup honey or maple syrup
1/4 cup brewed espresso, cooled
1 cup whole wheat flour
1/2 cup rolled oats
1/2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/4 cup chocolate chips (optional)

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.

In a large mixing bowl, combine the mashed bananas, applesauce, Greek yogurt, honey (or maple syrup), and cooled espresso. Mix until well combined.

In another bowl, whisk together the whole wheat flour, rolled oats, baking soda, baking powder, salt, and cinnamon.

Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
