Heat 2 tablespoons of oil in a pan, add 8-10 curry leaves, mustard seeds, and cumin seeds; fry until fragrant.

Peel and mash 3-4 boiled potatoes, then add the spiced oil mixture and 1 teaspoon salt; mix thoroughly to prepare the filling.
