50g anchovies
2 red onions
10 cloves of garlic
2 tomatoes
1 tsp of dried shrimp
1 tsp of salt
1 tsp of sugar
2 limes (juice)
8 red chilies
7 tbsp of cooking oil
2 litres of water (to cook the chicken)
3 chicken thighs
3 drumsticks (optional)
2 cubes chicken stock
2 tbsp ginger garlic paste
3 spring onions (stalk)
2 tsp of salt
1/2 tsp turmeric powder
1 tsp cumin powder
1 tsp fennel powder
2 tbsp coriander powder
1 tbsp chicken curry powder
2 tsp of salt
1 cup rice flour
1 egg
1 tsp of salt
chicken stock (roughly 1/2 cup)
2 cups of rice
pandan leaves
4 cups of chicken stock

For the sambal, add the anchovies, onion, garlic, tomato, chili, and dried shrimp and cook them well in the oil till the tomato is really soft. Then cool it down and blend them. Once done, add oil in the pan and cook the blended ingredients together with salt, sugar, and lime juice. Cook it really well till the color becomes darker and it's ready.

For the chicken, add the water in the pan. Next, add the chicken in together with chicken cubes, ginger garlic paste, spring onions, and salt. Cook for 15-20 minutes and our chicken is ready. Remove the chicken and reserve the stock for the rice and batter.

For the marination, add turmeric, cumin, fennel, coriander, and curry powder together with salt. Mix them all really well together with the chicken and tofu.

For the batter, get a bowl, add the rice flour, egg, salt, and chicken stock little by little. Make sure it's not thick or too watery. Next, dip the chicken and tofu into the batter, coat them well and begin frying till it turns out to a nice golden brown.

For the rice, wash the rice and rinse it well. Add the chicken stock together with the pandan leaves and cook the rice.
