1

Chop the vegetables coarsely: potatoes, parsnip, brown onions, carrots, and celery.

2

In a pressure cooker, add half of the chopped vegetables.

3

Place the pork hocks on top of the vegetables.

4

Sprinkle a few sprigs of thyme over the hocks.

5

Season with a healthy amount of salt and black pepper.

6

Add the remaining chopped vegetables on top of the hocks.

7

Pour 1 pint of water over the ingredients in the pressure cooker.

8

Seal the pressure cooker lid and set it to cook for 50 minutes.

9

After 50 minutes, allow the pressure cooker to depressurize and remove the lid.

10

Take out the pork hocks and set them aside, keeping the vegetables for another recipe.

11

Drizzle 1 tablespoon of honey over each pork hock, allowing it to melt.

12

Pour 2/3 of a bottle of Guinness beer over the hocks.

13

Preheat the oven to 180°C (356°F).

14

Place the hocks in the oven to roast for about 1 hour, basting every 15 minutes with the sauce.

15

After 45 minutes, check the hocks and baste them again to ensure they are golden brown.

16

Once roasted, remove the hocks from the oven and place them on a plate to rest.

17

To make a sauce, add water to the roasting pan to deglaze it, incorporating the meat juices and flavors.

18

Serve the hocks with the sauce poured over them, alongside mashed potatoes and sugar snap peas.
