1 teaspoon crushed red chili
1 teaspoon Kashmiri red chili
1 tablespoon ground coriander
1/4 teaspoon turmeric powder
1/2 teaspoon black pepper
1/2 teaspoon salt
1.5 cups water
1 cup (100 grams) sev
1/2 teaspoon garam masala
2-3 tablespoons chopped coriander leaves
2-3 green chilies, chopped

Heat 5-6 tablespoons of oil in a pan over medium heat.

Add 1 teaspoon mustard seeds and mix until they crackle for about 30 seconds.

Stir in 1 teaspoon ginger-garlic paste and 1 teaspoon cumin seeds; mix for 30 seconds to remove the raw smell.

Add 1 large finely chopped onion and mix well; cook on medium heat for 5-6 minutes until the onion is browned.

Once browned, add 2 medium pureed tomatoes and mix for 2 minutes.

Incorporate 1/2 cup beaten yogurt and mix well.

Cover and cook on medium heat for 3-4 minutes until the oil separates.

Mash the tomatoes well after cooking.

Add the spices: 1 teaspoon red chili powder, 1 teaspoon crushed red chili, 1 teaspoon Kashmiri red chili, 1 tablespoon ground coriander, 1/4 teaspoon turmeric powder, 1/2 teaspoon black pepper, and 1/2 teaspoon salt; mix well.

Add a little water as needed and sauté the spices for 2-3 minutes to develop flavor.

Once the oil separates from the spices, add 1.5 cups of water and bring to a boil.

Cover to speed up the boiling process.

Add 1 cup (100 grams) of sev and mix well.

Cover and cook for 2 minutes; if the sev is not soft, cook for an additional 2-3 minutes.

Once the sev is soft, garnish with 1/2 teaspoon garam masala, 2-3 tablespoons chopped coriander leaves, and 2-3 chopped green chilies.

Cover and cook on low heat for 2 minutes.

After 2 minutes, mix lightly and turn off the flame.
