Start by boiling water in a large pot for the pasta.
Add 1 tablespoon of sea salt to the boiling water.
Add 300 g of penne pasta to the boiling water and stir to prevent sticking. Cook for 11 minutes until al dente.
While the pasta cooks, heat extra virgin olive oil in a skillet over medium-low heat.
Chop 1/4 of a brown onion into small pieces and add to the skillet, sautéing for about 7 minutes until golden brown.
Add a splash of water to the skillet to prevent the onion from burning.
Chop a bunch of parsley, including the stems, and add it to the skillet with the onion.
Zest the lemon and add the zest to the skillet, then squeeze the juice of the lemon into the mixture.
Add capers to the skillet, ensuring they are washed beforehand, and season with salt and pepper to taste.
Once the pasta is done, reserve a mug of pasta water and drain the pasta.
Add the drained pasta to the skillet with the onion and parsley mixture, along with a splash of reserved pasta water.
Add 150 g of cream cheese to the skillet and toss everything together, adding more pasta water as needed to achieve creaminess.
Switch off the stove and add half of the smoked salmon to the pasta, mixing gently.
Plate the pasta, using the remaining smoked salmon to decorate the top.
Garnish with additional parsley.
