Wash and trim the ladies finger, then slice it into pieces.
Heat oil in a pan over medium heat until shimmering.
Add cumin seeds and sauté until fragrant, about 30 seconds.
Add sliced onions and cook until translucent, about 3-4 minutes.
Stir in chopped tomatoes, ginger, and green chili; cook until tomatoes soften, about 3-4 minutes.
Add turmeric powder, coriander powder, and salt; mix well.
Add the ladies finger and stir to coat with the spices.
Cook until the ladies finger is tender, about 8-10 minutes, stirring occasionally.
Remove from heat and let cool slightly.
In a bowl, whisk yogurt until smooth and creamy.
Add lemon juice and garam masala to the yogurt; mix well.
Combine the ladies finger mixture with the yogurt; garnish with fresh coriander.
