Delicious dirty rice recipe

Prepare diced pork and season with crushed garlic, ginger, jerk marinade, jerk powdered seasoning, and crushed pimento. Set aside to marinate.

In a pot, add 2 cups of parboiled rice, 1 teaspoon of curry powder, turmeric, chicken bouillon, and a pinch of salt.

Add 2.5 cups of water to the rice mixture and bring to a boil. Once boiling, reduce heat to low and allow to steam until fully cooked.

In another pot, add oil and sear the marinated pork for 2 to 3 minutes.

Add a little Browning to the pork for color and season with cayenne pepper to taste.

Cover the pork to allow it to produce its own liquid and simmer for a few minutes.

Gradually add hot water to the pork until it becomes soft and tender.

Add the Holy Trinity (chopped red and green bell peppers, celery, and chopped onion) to the pork.

Optionally add about a tablespoon of meat sauce and let it simmer on low heat without a cover to reduce the liquid.

Remove some of the meat from the pot to adjust the meat-to-rice ratio before adding the cooked rice.

Add the cooked rice back to the pot with the pork and stir to combine everything. Stir on heat for 1 to 2 minutes until mixed well.
