2 lbs bone-in skinless chicken thighs

1 tsp turmeric
1/4 tsp cinnamon
1/4 tsp pepper
1/4 tsp fenugreek
1/4 tsp cardamom
1/8 tsp cloves
1/8 tsp dried curry leaves
1.5 tbsp brown coriander
1.5 tbsp mild curry powder
splash of water
basmati rice

Peel and chop an onion.

Chop 2 large cloves of garlic finely.

Cut 4 large or 6 small ripe Aroma tomatoes into big chunks.

Preheat a large pot over medium-low heat.

Add a drizzle of avocado oil, chopped onion, and garlic to the pot and stir-fry until translucent.

Add the chopped tomatoes and let them disintegrate, stirring occasionally.

Peel 2 lbs of yellow potatoes and cut them into big chunks.
