100 grams corn flour
400 grams wheat flour

500 grams fresh cow's cheese
1 whole egg
1 egg yolk
75 grams lard
125 grams butter (optional)

Use 500 grams of any flour, I used 100 grams of corn and 400 grams of wheat flour.

Add 10 grams of salt and 10 grams of baking powder.

Add pepper to taste.

Incorporate 50-150 grams of pork greaves, or substitute with bacon.

Add 500 grams of fresh cow's cheese, or use ricotta cheese instead.

Crack 1 whole egg and add 1 yolk to the mixture, saving the egg white for later.

Add half of the dry ingredients to the mixture, then add all remaining dry ingredients.

Mix until combined; you should get about 1.2 kg of dough.

Store the dough in the refrigerator for at least 20 minutes.

Shape the dough into irregular shapes, about 1 centimeter thick.

Brush the tops with the saved egg white and sprinkle with coarse salt.

Bake for 25 minutes at 200C (392F) with top and bottom heaters on.

If using a hot air fan, bake for 25 minutes at 180C (356F), or a few minutes shorter for irregular shapes.
