3 cups of unbleached all-purpose flour
1½ cups of butter
2 teaspoons of salt
500g package of dry pressed cottage cheese

Preheat oven to 400˚F.

Whisk flour and salt together in a medium-sized bowl. Add butter and rub it with the flour between your fingers to create a blended, shaggy dough. Add cottage cheese and use your hands to mix in the same fashion.

Form dough and turn out onto a floured surface. Roll out to a ½-inch thick rectangle. Fold 1/3 of the dough from the left side into the centre. Repeat with the right side. Turn dough 90 degrees and repeat. Repeat this process three more times.

Divide dough into two equal portions and refrigerate for at least 1 hour.

Place chilled dough out onto a floured surface and roll out to a large rectangle approximately ½-inch in thickness. Using a 1.5-inch round cookie cutter or a shot glass, cut dough into rounds and place on a parchment-lined baking sheet.

Place into oven and bake for 20-25 minutes, turning the baking sheet at the halfway mark.

Remove from oven when high and golden.
